Rhodope wedge by Ivan Zvezdev
Products
1 incomplete tsp salt
1 tbsp. vinegar
100 ml of water
300 g flour for the filling:
1 cup rice 2 1/2 cups water
2 eggs
200 g Rupite cow's cheese
100 g Kiselovo butter for frying
Recipe:
Pour 250 ml of hot water into a saucepan, wash the rice and put it to boil over low heat until the water is absorbed. Wait for it to cool. Knead the dough by placing an incomplete teaspoon of salt and a tablespoon of vinegar in a bowl. Pour 100 ml of cold water and stir. Gradually add flour and knead a soft and sticky dough. Leave it to rest for 10 minutes. Divide the dough into two parts, one slightly larger. Roll out two thin sheets of dough, larger than the baking pan. Grease the pan with 40-50 g of soft butter. Place the larger sheet in it. Break the eggs into a bowl and beat lightly, add crumbled cheese and the cooled rice. Mix well and pour into the dough crust prepared in the pan. Cover with the second sheet and seal the edges. Place the pan on a medium heat. Roast the wedge for 10 minutes. Turn it over with a large board or plate. Add the remaining butter to the pan and return the wedge to roast for another 10 minutes on medium heat, brushing the surface with a little more butter.
